上面这种做法,口味是非常好的,烧好以后,豆腐比肉更好吃。建议做法:豆腐炸至9成熟。用葱姜蒜呛锅,然后下豆腐颠炒稍许,待香味入侵以后浇上少许用醋、酱油、鸡精、高汤、糖、盐、芡粉兑成的滋汁,收汁后下小葱段略翻起锅。装盘淋香油数滴。这样做的特点是因为烹饪过程短,能比较好地保持油炸豆腐的金黄色,而且香味浓郁,诱人下筷。Y

把豆腐切成一寸左右方块,用热油炸一下,表皮焦黄即可,用刀在距边1CM切下,不要切下来,留点皮使两块还连在一起,用小刀将下块的豆腐挖个洞,上面的部分正好可做为盖子盖上去。洞内可装馅,这就是豆腐箱子,也叫“棺材豆腐”,意思为有“官”有“财”。[/size]
